brickies are in haigh demand in all the major metro areas in Australia

All over. But I do know that you can walk straight intosomething in Adelaide.

yes - no problem at all getting a job!

when you buy a new build in Oz, you buy the plot of land then you go to a builder and they build your house from the 2/3 designs that he does, they always have a team of brickies /plasterers etc on board and you just go from job to job, so you will probally end up working all over!
hours start early normally 7.30 but the weekend starts lunchtime on friday - result bbq time!!!!!

If you are an experienced bricklayer you will have no problem getting work here in Adelaide.
I work for one (medium sized) builder in Adelaide and they alone do around 150 houses a year. So with all the other builders around you would not have a problem getting work.
