Australia via Hong Kong .... which Airport Terminal ?

I am flying to Australia via Hong Kong.

Does anyone know which Terminal the flights stop at, when this airport is my stopover destination ?
Also has anyone had experiance of HK Airport?
Can you travel between terminals while waiting for a connecting flight ?
I am looking to buy a camera and want to wander and browse many shops.

There are many shops, and I think I remember seeing cameras. What I hate about that airport is having to go through security when you're just making a connecting flight. There are three main floors that you will go through. All of the arrivals are on one floor, and all of the departures are on the level above. The plane doesn't move, they just move the jetway down to unload then up to load. One more level up are the check-in counters and the airline lounges. All three levels have shops.
