Could I apply for Hong Kong employment visa while I am in HK during visa-free period as a visitor?

While I am in my visa-free period in HK as a visitor, would I be able to apply directly in HK for employment visa without having to fly back to my home country (Australia) and then apply for a separate employ't visa?

It is possible. But the company should be prepared to give a reason why you apply in Hong Kong. And while you wait the few weeks you are not allowed to work.

The company will have to apply one for you. They might not be willing to do that when they can just hire a HK native

You should get a job first and then get your new employer to apply for a work visa on your behalf. Having said that the immigration office is unlikely to approve of a work visa for just anyone unless its a skill that HK does not have or lack of, meaning you probably have to do something that is unique.
