What typical food can I eat in Ecuador?

There is mote, locro, chuchucaras (pork skin deep fried), ceviche (although the peruvian version is much better!) camarones (shrimps) and my all time favourite: yapingachos which are like deep fried potatoe balls filled with cheese.
