You can go either down the Atlantic coast via Bordeaux and across from the coast to Perpignan via Toulouse, or the other way you say is via Lyon - Avignon - Montpelier.
Avoid the Peripherique (Paris ring road) if you can...The traffic there is murder most of the time. If you can avoid Paris altogether, even better...Its traffic is one of the most exasperating in the world.
Check out via the new Millau bridge (I don't know the route for sure, but it might cut across and save you driving time).

We used to stay in Formula 1 hotels. They were nothing special but always near the roads we were traveling. And they were very cheap too.
