How do you make homemade dampfnudels?

Dampfnudeln
1鈦? kg Flour
20 g yeast
50 g sugar
1鈦? l milk
2 eggs
50 g butter

Put the flour in a bowl and make a small depression in the middle. Put the yeast in the middle with a bit of sugar and hte milk made lukewarm. Let the yeast rise for a few minutes.

Add the rest of the ingredients and mix the dough well. Put the dough in a warm spot, cover it, and let it rise for about half an hour.

Make "kid fist" sized balls out of the dough and put them on a floured board. Again cover and let rise for another 30 minutes.

Take a cast iron pot with a tight fitting lid and add a finger's depth of water, 2 tablespoons of butter, and a bit of salt. Let it boil then add the dough balls and cover immediately. Reduce heat somewhat and let cook until all the liquid is gone. You should be able to smell the crust starting to brown (takes about 20 minutes).

This is something that my grandmother always used to make. It's quite hard to judge when exactly these are done without burning, but you don't want to open the lid too often either. Watch the pot and listen to the steam and you should be able to hear the change in noise when most of the liquid is gone.

Serve piping hot with sauce, or spread with butter, honey, or plum jam.

you need:

mix dry yeast with 1 teaspoon sugar and 5 spoons milk, let yield for 5 minutes until you see little bubbles.
Take the flour and mix with: very little salt,25gram sugar,30g butter, an egg and that grinded lemonpeel.
now you pour the yeast-milk solution over the flour mix and now you start knealing the flour paste in that bowl and every now and than you pour a little handwarm milk over it until it does not stick/glue anymore to the bowl.
Now you place a kitchentowel over the bowl and leave it for about 30minutes (let it yield) until the dough comes up.
Now take the dough and roll it to a big roll (2 inch) put flour on the table and roll it.
now devide into 6 big or 9 small pieces, form those pieces into a bowl and give them onto a baking form which you already have greased with little butter.
Place the towel over the baking form and leave it for 10 minutes.
Now you take a kitchen brush and brush the pieces with 30gram fluid butter and bestrew with 25gram sugar.
now into the oven (pre heated to 200 degrees celsius, 410 F.)
until the dampfnudels are golden brown.

cook some milk gently, mix 2 spoons of sugar with the vanillapudding powder and mix it all together with the milk
Serve the dampfnudeln with the warm vanilla souce.
