Is Saudi going to recognize Kosovo as an independant country?

Even USA has done this so far, along with the main European countries and a handful of others around the world. They are supported by NATO. Only 2 islamic countries have recognised them so far - Turkey (obvious!) and Afghanistan. Why are the others waiting?

They actually did!
The entire Organization of the Islamic conference backed the independance of Kosovo. This means the 57 Muslim countries that are members of the OIC do recognize Kosovo.
